For the past six months, Dr. Carlo Nicastro, his wife Cecilia, and their family have taken Yucatan-style cooking on the road with The Original Dr. Taco. Nicastro and his wife started the business in Playa del Carmen, Mexico, in 2003, building a reputation in food and travel publications with dishes like their signature. shrimp burger.

We order one, and indeed it is something special. Perfectly grilled shrimp are stuck in a creamy, gooey cottage cheese that has been crispy to perfection right where it melted on the griddle, and it’s as good as it sounds.

The shrimp are presented in a blend of garlic spices that impart a slight chili pepper heat and earthy, warm notes. We also order fish tacos and Chicken tacos and we are disappointed to see unaccompanied breaded and fried protein chunks in tortillas.

The truck’s salsa bar solves it all, however, and we enjoy the fish topped with cucumber salad – diced cucumber with cilantro – and pickled mangoes and jalapeños for subtle fruit and a brackish heat to make it all sing. The pineapple red chili salsa, which we try with chicken, adds a lot more chili flavor than heat and surprisingly little pineapple. It could use a little more salt, but chicken, like fish, is tender inside its crispy coating.
