The first secret to a good egg sandwich is to start with good bread. And the brioche that’s sliced ​​to order, then buttered and toasted for the sandwiches at Flippoly in Irvine (and Buena Park) is really, really good bread. Freshly baked breads arrive daily from Bread Artisan Bakery in Santa Ana, the same bakery that supplies the brioche for Marche Moderne in Newport Beach.

The original Flippoly opened in Buena Park just before the pandemic, quietly followed by Irvine’s location last month, where I finally discovered this egg sandwich shop.

The new branch (which has not yet installed signage) is still operating in pandemic mode, no seats inside are yet allowed. Fortunately, the Irvine Square where it is located has many outdoor tables (shared with a Starbucks) spread out along the sidewalk.

The second secret to a good egg sandwich is simple: don’t overcook the eggs. The cooks of Flippoly understood this well. Their scrambled eggs are soft and creamy and incredibly chewy. They fold and layer the eggs with deli ham and American cheese, then drizzle the sandwich with a few different sauces – one is a sweet, dripping mayonnaise that reminds me of Japanese Kewpie and the other is spicy, similar to the sriracha.

They do other variations, like the bulgogi and kimchi stuffed sandwich or one with hash browns, but the ham and cheese have been my favorite so far.

Although this is a restaurant with counter service, it is not fast. The queue for these sandwiches on weekend mornings steadily increases to 20 people. An order of two or three sandwiches can take up to 20 minutes or more. Management appears to be well aware of this complaint as there is a request for help sign on the front door and a large note at the checkout asking customers to be patient as the restaurant is still in checkout mode. opening smoothly and woefully understaffed.

And while their official posted hours in Irvine are 11:00 a.m. to 9:00 p.m. (with breakfast times to come), the kitchen is known to sell sandwiches in the middle of the afternoon, so plan ahead. result.
